Chunky rounds of fresh oxtail cooked or braised for three hours till the fat is soft and gelatinous and the flesh is falling off the bones.

Cook with carrots onions celery and seasonings.

Let it cool and put in the fridge overnight and you will then easily remove the surface fat.

Reheat gently on the hob for a succulent meal.
